CHOCOLATE ZUCCHINI CAKE

A ‘dump’ cake, like this one, is a cake where all the ingredients are ‘dumped’ into the bowl together, then mixed to make a thick batter. No fancy techniques required – just like using a cake mix.
Makes 16 servings
2-1/2 cups all-purpose flour
1-1/2 cups granulated sugar
¼ cup cocoa powder
1 teaspoon baking soda
½ teaspoon ground cinnamon
1/4 teaspoon salt
½ cup unsalted butter, melted
½ cup vegetable oil
½ cup buttermilk
2 large eggs, beaten
½ teaspoon vanilla extract
2 cups shredded zucchini
1 cup chocolate chips (or 1/2 each chocolate chips and chopped walnuts)
Preheat oven to 350°F. Line 9×13-inch cake pan with parchment paper. Set aside.
In large bowl, whisk together flour, sugar, cocoa, baking soda, cinnamon and salt.
In separte bowl, combine melted butter, oil, buttermilk, eggs and vanilla. Whisk together. Add to dry ingredients and stir until just combined.
Fold in grated zucchini. Scrape batter into prepared pan, smoothing top. Sprinkle with chocolate chips (and nuts if using).
Bake in center of 350°F oven for about 35 to 40 minutes or until cake tester tests clean. Let cool on rack.
